Grilled Chicken and Vegetable Skewers

Ingredients:

  • 2 boneless, skinless chicken breasts, cut into chunks
  • 1 zucchini, sliced
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 8-10 cherry tomatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Wooden or metal skewers

Instructions:

  1. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  2. In a bowl, combine olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper. Mix well.
  3. Thread the chicken chunks, sliced zucchini, bell pepper chunks, red onion chunks, and cherry tomatoes onto the skewers, alternating between ingredients.
  4. Brush the skewers with the prepared olive oil and herb mixture, coating them evenly.
  5. Preheat your grill to medium-high heat. If using a grill pan indoors, preheat it over medium-high heat.
  6. Place the skewers on the grill or grill pan and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and the vegetables are charred and tender.
  7. Once cooked, remove the skewers from the grill and let them rest for a few minutes.
  8. Serve the grilled chicken and vegetable skewers hot, garnished with fresh herbs like parsley or basil, if desired.
